Did You Know?

Did you know that despite what they tell you at the cannery, you don't want to can white flour or sugar. I don't know why, but it makes it taste funny. I have tried to use it anyway and hide it in a recipe. I doesn't work. It just makes it taste gross.

Here's what you need to know.

Purchase some 5 gallon plastic food storage buckets. They sell them here, but you might be able to find them locally for cheaper.
Buy your sugar at Costco in the big bags and store it in the buckets. You don't even need to seal it, because bugs won't get into sugar.

Do the same thing with white flour. I have 4 buckets full of white flour, and I just keep them rotating. They are in a closet close to the kitchen. I keep a plastic container full of flour in the pantry. When it runs low, I head to the closet to fill it up again.

Trust me on this one. You will regret it if you can these two items. Buckets are the way to go!

An old woman in my ward told me that if you wrap a couple of bay leaves in some thin fabric and stick it in your flour that it won't get weavels... ever. I haven't tried it yet, I wondered if it would give the flour a wierd taste. She swears by it and I'm going to try it when we get settled.

It's not just me! I dumped a whole thing of sugar because it was weird and I just couldn't eat it. I thought I must have gotten a bad batch but I haven't ordered sugar from the cannery since. Good to know about the buckets. Do the buckets for flour come lined with something to keep the bugs out? Or do you go through flour fast enough that it stays good?

I have never had problems with bugs. If you think you won't use it fast enough, put the flour in the freezer for 2 days and then put it in the bucket. That will kill any eggs that might be in the flour.

You can get 5 gallon plastic buckets for FREE from Safeway's bakery. You just have to clean them yourself. The two I just got had icing in them. YUM!

I just found a website that has the same buckets for about 1/2 the price. They also sell "gamma seal lids" which make the buckets airtight, watertight, moisture free (because that's a big problem in Arizona--Aah, but it is in Oregon!) and they're resealable.
