Cowboy Caviar

I have given this out to many of you, but I've had so many requests lately I have to give it again.
This is the bomb when it comes to chip dip. It might sound weird, but it is sooooo delicious.

Cowboy Caviar

2 cans shoepeg corn, drained (shoepeg comes in small cans. If you can’t find it, use 1 can regular or white corn.)
1 can black eyed peas, drained
1 tomato, chopped
½ bunch cilantro, chopped
1 bunch green onions, chopped
2 cloves garlic, crushed
2 avocados, chopped
2 tsp cumin
¼ tsp pepper
¾ tsp salt
¼ cup red wine vinegar
¼ cup olive oil

Mix together and serve with corn chips.
(Scoops work the best)
