Citrus Chicken
Marinade
- 1/4 cup olive oil
- 2 T. lemon juice
- 2 T. orange juice
- 1 T. minced fresh rosemary
- 2 tsp garlic minced
- 2 tsp salt
- 1 tsp white pepper
- boneless skinless chicken breasts (4 or more)
Sauce
- 1 T. minced garlic
- 2 tsp olive oil
- 1/4 cup chicken broth
- 2 T. fresh lemon juice
- 2 T. orange juice
- 1 tsp salt
- 1 tsp white pepper
- 2 T. butter, cut into bits
Combine marinade in shallow dish and marinade chicken for at least six hours or in the fridge overnight. Grill or broil chicken how ever you like it. For the sauce, saute garlic in oil in a saucepan over medium high heat until golden brown. Add the rest of the ingredients except the butter. Cook to reduce by 1/2. Add butter and allow to melt, then serve over the chicken!

You always have good recipes. I'm going to try this one. Besides it has one of my very favorite ingredients: Citrus! Mmmm...
Your back!! I was dying to hear all about the trip...my babies have decided that they MUST go to disney...so we are thinking about it. (Ladybug loved the picture with minnie mouse btw) Good to know about the off season thing.
